This recipe for pork spareribs starts out by broiling the meat and then cooking them at a lower temperature to caramelize the barbecue glaze. Instructions
1. Remove the membrane from the side of the bone. Use a small paring knife to separate it from the bone and then pull on it. Dispose of membrane in a trash can.
2. Place the ribs in a large shallow container. Rub the ribs with the brown sugar. Turn the ribs over with the meat side facing down. Pour in the vinegar. Allow the ribs to marinate for a couple of hours.
3. Set the oven to broil. Remove the ribs from the marinade and put them in the broiler pan. Place the ribs under the broiler for about 15 minutes, or until they begin to turn brown. Turn the pan around in the oven to broil evenly.
4. Decrease the oven temperature to 375 degrees. Cook the ribs for about 20 minutes longer.
5. Remove the ribs from the oven and use a brush to generously apply the barbecue sauce. Put them back in the oven for 15 minutes. Repeat this step two more times until barbecue sauce is caramelized.
6. Remove the ribs from the oven and place them on a carving board. Separate the ribs from each other and serve.
